Bancho Sushi operates purely in the evening. The core loop involves taking the fish, seaweed, and ingredients you gathered during your morning and afternoon dives, crafting a menu, and serving customers before time runs out. Your performance is graded nightly on factors like sales, customer satisfaction, and wasted food, all culminating in an Artisan rating that unlocks new recipes and staff slots on Cooksta.
One of the biggest beginner mistakes is putting every single fish you caught on the menu. Do not do this.
You unlock the ability to hire staff early in Chapter 1 (around Day 3 or 4) after completing Yoshie's VIP quest (serving her the Whole Roasted Shark Head). Occasionally, VIP customers will visit. They usually require a specific, multi-ingredient dish that takes a few days to gather. Prioritize these quests, as completing them rewards you with massive cash payouts, new recipes, and unlocks unique restaurant features.
Always keep an eye on the Wasabi meter on the right side of the screen. If it runs out, Bancho cannot make any sushi, and your service will grind to a halt. Whenever there's a lull in orders, run over and grate more wasabi.
